Brandy cocktails you should know

French 75

1/2 oz lemon juice
1/2 oz simple syrup
1 oz Brandy Sainte Louise
sparkling wine

Combine ingredients (except for sparkling wine) in a shaking tin, add 1 piece of ice and gently shake to chill and dilute, strain and serve in a tumbler glass filled with ice. Top with sparkling wine and serve with a lemon peel.
